How to cook eggplant? Eggplant is packed with a lot of vital nutrients that makes the human body work properly. It is also a brain food because of the presence of anthocyanin phytonutrient in the skin. They protect the brain cells from damage and make sure that the cell membranes are not threatened.  Having an eggplant will make sure that your brain is receiving the right nutrients it needs and the cell membranes will function properly. Ingredients:

· 1 round eggplant

· Turmeric

· Red chili powder

· Coriander powder

· Garlic-ginger paste (optional)

· Salt

· Cooking oil

Directions:

Step 1: Cut the eggplant in circles so that they look like discs. Wash the round-shaped cut eggplant and cover in salt. You do not want them too salty.

Step 2: It is time to marinate them. Start with the garlic-ginger paste. As it is optional, you can skip it and directly cover with turmeric and other spice powders listed in the ingredients. Let them sit for 15 minutes.

Step 3: Pour cooking oil in a frying pan on medium heat, add the marinated eggplant one by one and let them turn golden-brown before you serve them.

Batter fried eggplant

Ingredients:

· 1 long eggplant

· Gram flour/ garbanzo bean flour/chickpea flour

· Turmeric powder

· Red chili powder

Directions:

Step 1: You will need a long eggplant for this. Cut it so that they are pieces looking similar to a rectangle. Wash them and cover with salt.

Step 2: It is time to make the gram flour batter where you will dip the cut pieces of eggplant. Add the flour and the other items in the list except for oil and add water. Make sure the consistency of the batter is thick. If it is being too watery, add more flour. According to the amount, add the spices and paste. They should be very small in amount for example for an 8 ounces of batter the amount of all the spices and paste together should be 1 tablespoon.

Step 3: Leave out the batter and the eggplant for one hour. Heat the frying pan with cooking oil. Make sure you have added a lot of cooking oil because this is deep-frying. When the oil is slightly heated, add the pieces one by one to and fry them. Flip them over after at least forty seconds of frying. They should be light brown in color when they are ready to be served.

Tips:

• You can serve them with rice if you are having eggplant as a part of your lunch and you can have the batter fried eggplants as snack along with your favorite sauce.

• You can go with sunflower oil or olive oil since you will need to use a big amount of oil and you need something that is healthy.
